It's a shortened version of two other slang terms for coffee: java and jamoke. but this method that the american sailors got was Joe is prohibiting us from alcohol but their Italian sailors drank espresso... so the first Cup-of-Joe was really hot water over espresso. The Americans liked the coffee but as strong as the Italian Navy. Today Cup-of-Joe is commonly a term for pour me a mug of "drip brew" off of that Mr Coffee maker.
